Cheesy French Onion Cobb Loaf

A French-inspired twist on the classic Cobb, this cheesy cobb loaf is loaded with savoury goodness—melted cheese, crispy bacon and French onion, all baked into a golden, crusty loaf.
Ingredients
275g cream cheese
250ml thickened cream
180ml sour cream
300g shredded cheese
2 spring onions
4 rashers short cut bacon
150g baby spinach
1 packet dry French onion soup
Pinch of salt and pepper
1 cobb loaf
Line tray with baking paper and preheat oven to 190°C fan forced
Cut a circle in the top of your cobb loaf and remove the "lid". Scoop out all the bread from the inside and set aside.
Slice the bacon and spring onion into small pieces and cook in a frying pan for 4 - 5 minutes. Remove from heat and set aside.
Put the softened cream cheese, sour cream, and cream into the same pan you used for the bacon on low heat and use a wooden spoon to combine the creams together.
Add in the French onion soup packet and stir to combine.
Slowly add the grated cheese and spinach and mix until all cheese has melted, and spinach has wilted.
Add back in the cooked bacon/onion and sir everything thoroughly to combine.
Spoon the dip mixture into the centre of the cobb loaf before placing the lid back on top of the bread, cover the top with foil and place in the oven on a tray.
Bake for 30 minutes with the lid on before removing and enjoying your delicious dip with some crusty bread.
